It’s that time of year when those wonderful fruitcakes and Christmas cakes start to turn up. One of those holiday traditions that you either love or if you’re like me, you can only enjoy in small doses! I’ve found a way to eat your cake in a layered and delicious version- le Parfait! Let’s face it, there is always leftover slices hanging out in the freezer months later and this is the perfect way to enjoy those lingering Christmas memories. All you need to do is layer Vanilla ice-cream, then crumble a slice of Christmas cake and top it with Chantilly whipped cream and a sprinkle of Cinnamon. These make a chic and modern holiday dessert to serve your guests!
Ingredients for each cup
1 scoop of Haagen Dazs Vanilla Ice cream
1 slice of crumbled Christmas cake or fruitcake
3 tbsp of Chantilly Cream (Beat 1/2 cup of whipping cream with 1 tbsp of Confectioners sugar)
Sprinkle of Cinnamon
Optional, but recommended, a splash of Cognac
Directions
Beat the whipped cream with the confectioners sugar and set aside.
In a glass layer first the scoop of Vanilla Ice cream.
Add the crumble piece of Christmas Cake. Optional add a splash of Cognac.
Add the layer of chantilly cream, using a spoon to smooth it into the edges of the glass.
Sprinkle with Cinnamon and serve immediately. If you have guests, you can make ahead in the day and place in the freezer (just take out and transfer to the fridge when dinner begins and they will be ready to serve 30 mins later)
